Apricot Date Bars
Apricot Date Bars are very flavoursome and so easy to make.
125g dried apricots, chopped
1 cup brown sugar
2 cups self raising flour
1 cup desiccated coconut. Reserve a little coconut to sprinkle on top.
½ cup chopped dates
¼ teaspoon salt
180g butter, melted
Soak apricots in hot water for 1 hour then drain. Add all other ingredients except reserved coconut and mix well.
Spread mixture into a greased lamington tray, sprinkle with coconut, and bake at 180C for 25 minutes or until golden brown.
Allow to cool and cut into squares
