Banana Bread

 

Ingredients

125g butter, softened

1 cup sugar

2 eggs at room temperature

2 cups plain flour

2 teaspoons baking powder

4 ripe bananas

1 teaspoon vanilla

½ teaspoon salt

Method

Cream butter and sugar together and add vanilla. Add the eggs one at a time. 
Add sifted dry ingredients and fold into mixture. Peel, and mash the bananas and add to the mixture. 
Pour mixture into a greased loaf tin and bake at 180C for 1 hour or until skewer comes out clean. If you are using a fan forced over reduce oven temperature by 20C.

Remove from the oven and allow to sit for 3 minutes. Turn loaf out onto a clean tea towel and wrap loaf until cold. When cold, wrap it in foil, and leave to ripen for a day. This improves the flavour.
