Beef Tomato and Bacon Pie
The ingredients of this pie give it enough flavor without herbs or spices. When I am making a family sized pie I simply layer the ingredients one after the other without any fuss. This recipe is quick and easy enough for a family meal and sophisticated enough for a smart dinner.
1 large onion
500g minced beef
1 tomato, sliced
2 rashers bacon, chopped
6 slices of cheddar (or similar) or equivalent in grated cheese
2 large leaves silverbeet or similar quantity of spinach
salt and pepper to taste
2 sheets frozen puff pastry, thawed
Use this recipe to make a 22cm family sizer pie or 12 individual pies
Microwave onion for a couple of minutes or until soft. Add minced beef and microwave on high for 5 minutes, stopping to stir once during the time. Allow to cool.
Line pie dish with puff pastry, frozen puff pastry is good. Spread ingredients in layers leaving the spinach or silverbeet until last. It is a good idea to microwave the spinach or silverbeet for 30 seconds or a bit more so that it is less in volume. It will make it easier to get the pastry top on the pie.
Bake at 200C for 25 minutes or until golden brown.
If you are making 12 little pies it is too difficult to keep the ingredients in layers: mix altogether and fill pie crusts
An option is to sprinkle the top with grated cheesed instead of a pastry top
