Everybody has got a favourite Bolognaise recipe. There are thousands. I think with Bolognaise “less is more” and by that I mean keep it simple.
A great sauce for any pasta can be as simple as tomatoes with some chopped Basil and maybe a bit of Parsley.
The following recipe is in my collection and I hope you find it useful
1 onion, finely chopped
1 clove garlic
500g minced beef
1-tablespoon olive oil
1 small packet Ariosto herbs (from Italian deli)
1 can tomatoes
1 bottle crushed tomatoes
1 beef cube
salt and pepper to taste
1 teaspoon chopped basil
1 glass red wine
1-tablespoon tomato paste
2 bay leaves
Chop onion finely and brown gently in a pan with a little olive oil. Add chopped garlic and cook for a few minutes. Add parsley, butter, beef, salt and pepper. Finally, add herbs and red wine. Cook 10 minutes.
Reduce heat and simmer for 2 hours adding more wine if necessary.
Serve with grated Parmesan cheese.
