1 cup (220g) sugar
½ cup cold mashed potato
1 cup (250ml) milk
1 cup (155g) sultanas
2 cups (250g) self-raising flour
1 teaspoon cinnamon
1 teaspoon mixed spice
185g icing sugar
2 teaspoons lemon juice
30g melted butter
3 teaspoons desiccated coconut
Preheat oven to 200C. Fan forced 180C.
Cream sugar and cold potato in a bowl.
Sift flour and spices; alternately add flour and milk to sugar mixture. Add sultanas and fold in gently.
Form mixture into a ball and place on a baking sheet and bake for 25 to 30 minutes. Bun should sound hollow when tapped.
Allow bun to cool before icing.
To make icing: combine the icing ingredients in a bowl and spread over top of bun.
