Cornflake Crunchies

 

Cornflake Crunchies are a wonderful old standard. Easy to make and always popular.

 

Ingredients

80g butter

240g brown sugar

1 egg, beaten

1 ΒΌ cups plain flour

1 teaspoon baking powder

pinch of salt

2 cups cornflakes

1 cup mixed dried fruit

 

Method

Cream butter and sugar. Add egg. Sift flour, salt, and baking powder and add to butter mixture. Stir in cornflakes and mixed fruit.

 

Grease a baking tray and drop spoonfuls of mixture and bake at 180C for 12 to 15 minutes
