1 cup plain flour
1 cup coconut
½ teaspoon ground cinnamon
½ teaspoon mixed spice
1 cup rolled oats
1 cup sugar
1 teaspoon ground ginger
1 teaspoon bicarbonate of soda
Melt butter, sugar and syrup. Allow to cool slightly.
In another bowl, place flour, bicarb, oats, all spices and coconut. Add the melted mixture to the dry ingredients and mix well.
Press the dough flat into a well greased pan. Bake in a warm oven 175C for 10 to 12 minutes or until brown.
Cut into squares while still hot. Biscuits will harden as they cool.
