300g wholemeal flour
200g wheat bran
4 teaspoons baking powder
200g light soft brown sugar
2 teaspoons ground cardamom powder
Large pinch of salt
400g salted butter
up to ½ cup milk
Preheat oven to 180C
Blitz oats and wheat bran to a fine powder, place in a large bowl and add flour, baking powder, sugar, cardamom, and salt. Add butter and mix until crumbly. Add milk and mix to form a smooth but stiff dough.
Wrap in cling film and refrigerate for about 20 minutes.
Line a non stick baking tray with baking paper.
Roll out dough to about 3mm think and cut circles about 4cm to 6cm.
Bake in centre of oven for about 15 minutes. Allow to cool on a rack..
Store in an airtight container.
