dinner with spiced lamb cutlets

Four course dinner for 6 people. Soup is Speedy Minestrone, easy and quick to prepare as the name suggests, but tasty and substantial, with kidney beans, pasta, parmesan cheese. Entree is Zucchini Mousse with Parmesan Sauce. A tasty entree, with zucchini, parmesan, garlic. Main course is Spiced Lamb Cutlets. Always tender and very tasty with paprika, cumin, and tomatoes. Dessert is Refreshing Melon Fruit Salad which is easy to prepare and always popular. Champagne melon, rock melon, honey melon.

 

Soup

Speedy Minestrone

Ingredients

30g butter

1 large onion, thinly sliced

1 clove garlic, crushed

2 rashers bacon, chopped

1 stick celery, chopped

1 large carrot, chopped

425 can tomatoes, chopped

310 can red kidney beans, drained

3 cups water

2 chicken stock cubes, crumbled

½ cup spiral pasta

¼ grated parmesan cheese

 

Method

Melt butter in large saucepan, add onion, garlic, and bacon, and stir over a medium heat until onion is soft. Add celery and carrots, and stir over a medium heat a further 2 minutes. Stir in tomatoes with their juice, beans, water, stock cubes, and pasta, and bring to the boil. Reduce heat and simmer for 30 minutes. Serve topped with cheese.

 

 

 

Entree

Zucchini Mousse with Parmesan Sauce

Ingredients

60g butter

1 clove garlic, crushed

3 small zucchini, chopped

3 shallots, chopped

2 tablespoons plain flour

¾ cup milk

3 teaspoons gelatine

2 tablespoons water

½ cup thickened cream

Parmesan Sauce

¾ cup cream

½ cup grated fresh parmesan

1 egg, lightly beaten.

Method for Parmesan Sauce

Add cream to small saucepan, bring to the boil and stir in cheese. Remove from heat, stir in egg, stir over heat until mixture thickens but do not boil. Serve at room temperature to bring out the flavour.

Method

Lightly oil 6 moulds (½ cup capacity)

Melt butter in medium saucepan, add garlic, zucchini, and shallots, stir over medium heat for about 2 minutes. Remove from heat and gradually stir in milk. Return to heat and bring to the boil and boil for 3 minutes. Until mixture thickens. Blend or process mixture zucchini mixture until smooth. Allow to cool.

Sprinkle gelatine over water in a small bowl. Stand small bowl in a pan of simmering water until gelatine dissolves. Stir into zucchini mixture, spoon mixture into moulds. Cover and refrigerate for several hours or overnight. Turn out and serve with sauce.

 

 

 

Main Course

Spiced Lamb Cutlets

Ingredients

600g butternut pumpkin, unpeeled and cut into 1cm thick slices

1 tablespoon ground coriander

1 tablespoon paprika

1 teaspoon cumin

18 trim lamb cutlets

olive oil

cooking spray

80g salad leaves

200g cherry or grape tomatoes, halved

1 lebanese cucumber, cubed

 

Method

Preheat barbecue grill and plate on medium high. Arrange half the pumpkin on a microwave safe plate and drizzle with a tablespoon water. Cover, and microwave on high for 2 minutes. Repeat with remaining pumpkin.

Combine spices and coat lamb.

Spray lamb and pumpkin with oil. Cook lamb on barbecue grill for 4 minutes each side. Cook pumpkin on barbecue plate for 2 to 3 minutes each side.

Serve with salad leaves, tomato, and cucumber.

 

 

 

Dessert

Refreshing Melon Fruit Salad

Ingredients

¼ watermelon, peeled

1 peeled rock melon, halved

1 peeled honey melon, halved

1 peeled champagne melon

Toffee Lime Syrup

1 cup white sugar

¾ cup fresh lime juice

3 passionfruit pulp

 

Method

Cut watermelon into 4cm pieces, remove seeds, place in a large bowl. Cut rock melon, honeydew and champagne melon into wedges. Roughly chop. Place in bowl with watermelon.

Method for syrup

Place sugar in a heavy based saucepan over medium heat. Cook, tilting saucepan back and forth until sugar dissolves and turns a deep golden brown. Set aside.

Stir passionfruit through syrup. Pour over chilled fruit and serve immediately.
