Fabulous Fruit Loaf

 

Ingredients

2 teaspoons mixed spice

3 cups bread flour

2 teaspoons instant dried yeast

¼ cup caster sugar

1½ cups warm water

1 teaspoon salt

½ cup dried chopped dates

¼ cup sultanas

¼ cup currants

¼ cup chopped peel

1 teaspoon sugar in 1 tablespoon boiling water to glaze

 

 

Method

To the bowl of an electric mixer fitted with a dough hook, add mixed spice, 3 cups bread flour, yeast, sugar, and water and knead for 10 minutes, or until dough becomes smooth and elastic.

Place dough in a bowl. Cover with a tea towel. Set aside in a warm place for 1 hour or until dough doubles in size. Grease a 6cm-deep, 9cm x 19cm loaf pan.

Punch dough down, add salt, and knead for around 5 minutes. Turn out on to a lightly floured surface. Roll dough out flat to a 20cm x 30cm rectangle. Spread fruit evenly over surface, and then roll to form a log. Place log into prepared pan, cover with a tea towel, and allow to double in size.

Preheat oven to 200°C – 180°C fan-forced. Bake for 10 minutes then reduce temperature to 170°C – 150°C fan-forced and bake a further 30 minutes or until golden brown and hollow when tapped on top.

Brush top with sugar and water to glaze. Stand in pan for 5 minutes. Turn out on to a wire rack to cool.
