Fabulous Hot Cross Buns
Ingredients for the dough
150 ml milk
2 teaspoons sugar
50 grams butter, softened
zest of 1 lemon
400 grams bread flour
2 teaspoons dry yeast
125 grams mixed dried fruit
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ teaspoon ground ginger
Warm the milk, add yeast and sugar, stand in a warm place for 5 or 10 minutes until mixture becomes frothy.
In the bowl of an electric mixer fitted with a dough hook, place bread flour, butter, lemon zest, spices, egg, and milk mixture.
Knead dough for about 8 minutes.
Place dough in an oiled bowl and rest until dough has doubled in size.
Move dough to a floured surface and start kneading and stretching. Add dried fruit and fold until you have a ball shape. Keep kneading and repeating these steps for 5 minutes. Return to buttered bowl and cover.
When dough has again doubled in size, punch down and divide into 16 even balls. Place balls in an oven dish with sides almost touching. Cover dish and allow balls of dough to double in size.
Brush the buns with an egg wash, and with a sharp knife, score the tops of the buns with cross imprint. Mix the cross ingredients and pipe into slits.
Preheat oven to 180C or 160C for a fan forced oven.
Bake for 30 minutes but start checking around 25. C
When hot cross buns are done brush each hot bun with the sugar glaze to add a lovely shine.
The Egg Wash
1 large egg (beaten with a little milk)
3 tablespoons plain flour
½ tablespoon caster sugar
2 tablespoons water
1 tablespoon caster sugar
1 tablespoon boiling water
