2 tablespoons golden syrup
185g brown sugar
1 egg, beaten
315g self raising flour, sifted
½ teaspoon salt
1 tablespoon ground ginger
1 teaspoon mixed spice
Preheat oven to 160C
Melt butter and golden syrup in a saucepan. Allow to cool because you are adding an egg and you don’t want the egg to cook. Add egg, then add sugar.
Add sifted flour, salt, mixed spice, and ginger. Mix well
Roll out to desired thickness and cut out shapes with a biscuit cutter. Decorate with chocolate chips for eyes and mouth, or other sugar decorations.
Bake at 160C for 10 to 12 minutes
