Lemon Zucchini makes a great addition to a meal or even a snack. It’s a very good entree too.
4 large zucchini, sliced
1 tablespoon extra virgin olive oil
1 lemon rind, grated
Trim zucchini. Heat oil in a pan over medium heat and cook zucchini for 1 to 2 minutes. Add lemon rind to zucchini and cook until well combined. Season with salt and pepper. Serve with a small garden salad.
This is best made when you are ready to serve. It can get a bit saggy if left for too long.
