There are two recipes here; one for the dry pancake mix that you can keep in the cupboard; the other is for making the pancakes from the prepared and stored pancake mix.
For the pancake mix:
600 grams plain flour
3 tablespoons baking powder
2 teaspoons bicarbonate of soda
1 teaspoon salt
40 grams caster sugar
1 teaspoon vanilla
Mix all the ingredients together and store in an airtight container
To make the pancakes:
150 grams of pancake mix
1 large egg
250 ml milk, semi or full fat
1 tablespoon melted butter
Heat a flat dry pan to medium heat.
Mix the ingredients together to form a runny batter. Add the melted butter just before you start dropping the batter onto the pan.
Spoon mixture onto the pan, and flip over when bubbles start to form on the surface. They should take a minute or two on each side.
This mixture should make about 15 x 3 inch pancakes.
