Thermomix Christmas Pudding
250g each of dried apricots, prunes, and dates, snipped into quarters
zest and juice of 1 orange and 1 lemon
90g glacé cherries, halved
80g each of sherry and brandy
Combine above ingredients and leave to stand for 24 to 48 hours.
250g each of butter and sugar
180g plain flour
1 teaspoon baking powder
Weigh butter, sugar and flour into the TM bowl, add eggs and baking powder. Mix 30 seconds/Speed 5. Add the fruit mixture and combine. Steam pudding for 2 hours.
